Each year we travel (fall) In Colorado, there is always a challenge to find easy to prepare dinner so that the cook can get the kitchen and enjoy the beauty of autumn. Our friends joined us and helped salmon. We fish in the morning and have what we call full-time afternoon. It's where everyone goes to the corner to read or nap. I wanted the salmon before our time and set aside. So I decided on this recipe easy cooking and salmon glazed with honey mustard sauce.
This is what you need:
Honey Mustard Salmon
2 tablespoons tablespoons juice fresh lemon
2 tablespoons Dijon mustard
2 tablespoons honey
1 teaspoon grated lemon zest
4 (6 oz) salmon fillets
Salt and black pepper
Nonstick cooking spray or butter
In a greased (cooking spray or butter) shallow baking mix lemon juice, mustard Dijon, honey and lemon zest. Mix. Season both sides of salmon fillets with salt and pepper and place in a baking dish. Flip salmon to cover the enamel. Cook immediately or cover with plastic wrap and refrigerate up to 3 hours. The good thing about this recipe is the easy option, but you have to refrigerate while you dive into a good book.
When ready to bake, preheat oven to 400 degrees F. Bake 10 minutes until fish is fork – tender. Be sure to drizzle a little honey fair before putting the dish in the oven.
Just before the salmon is ready, fly a small bunch of green beans with a little garlic and onion. Then cut two potatoes in half and microwave until tender, about 6 minutes. Depending on the altitude and size of the potato. Everything should be ready in time to serve some 20 minutes, unless you want to make a simple salad. Since I already have the honey and Dijon mustard to try this for a simple vinaigrette.
Honey Dijon Dressing
4 tablespoons Dijon mustard
2 tablespoons tablespoon honey
8 tablespoons extra virgin olive oil (taste, adding to see if you need more or less to taste)
Salt and pepper to taste.
Mix all ingredients in small bowl and serve with lettuce of your choice.
Now, after delicious dinner, but easy, you have time to relax with a glass of wine and discuss tomorrow the fishery or the one that got away today …
